For centuries, the traditional knowledge of making pickles in India has been passed on from generation to generation. In whole India you will get all type of vegetable pickle as per the spices commonly used in that part/state of India. No Indian food platter is complete without it & most common vegetable pickle are mango pickle, lemon pickle, chilly pickle, ginger pickle, carrot pickle, bamboo pickle, jackfruit pickle and garlic pickle — to name just a few. In fact, almost all types of vegetables are pickled in different parts of India.


When it comes to non veg pickles, than it may surprise you that it is very common consumed in every household of south India & no meal completes without non-veg pickle. Every state in south India makes non-vegetarian pickles and each household has its own traditional recipe, passed down from mother to daughter. Recipes for these pickles may vary from home to home, but all of them have a few common ingredients: sesame oil, ginger, garlic, turmeric, and chilli powder


Apart from south India, non-veg pickles are very popular in many states of north-east in India. You will get all sorts of non-veg pickles, mutton pickle, fish pickle, prawn pickle, chicken pickle, beef pickle & pork pickle.


In all states of north India like punjab, uttarpardesh, rajasthan, delhi(UT) or uttrakhand , veg pickles are very famous & no meals is complete without it. Many households make pickles during summer that usually last for a year.You will get all sorts vegetable pickle in every household & is believed to aid digestion when eaten in small quantities.  Majorly they prefer to make at home as per the recipe they got from their dadi/nani/mother but in metro cities, due to nuclear families & time concern, people buying it from market.

Mango Pickle- Mango pickle is a traditional Indian condiment made with raw mangoes, spices and oil. In India, pickles are relished as a side in every meal


Carrot Pickle- Carrot pickle again is a traditional Indian condiment made with raw red carrot, spices and oil. Mostly it’s been made in winters, due to availability of red carrots in winters only


Lemon Pickle- Lemon pickle is a traditional Indian condiment made with lemon, ground spices, and salt with optional ingredient- oil.


Green Chili Pickle- Green chili pickle is manufactured in Rajasthan, Karnataka, Maharashtra and other places. It is commonly used as a condiment with the main dishes. In Rajasthan, it is prepared by slitting chillies length-wise and frying them with ginger, garlic, and green chili pickles. Other flavouring agents include mango powder, nimbu ras, and fenugreek. It is considered a Rajasthani specialty and is sometimes used as a flavour for Indian snack foods


Garlic Pickle- Garlic pickle is a popular spicy pickle in north India. It is prepared by mixing peeled garlic cloves with mustard seeds and jaggery along with a pinch of salt, with jaggery acting as the sweetener.


Red Chili Pickle– Red chili pickle is a very popular pickle in India, which many households prepare in the home. It is prepared by slitting red chillies length-wise, stuffing them with fenugreek powder, and placing them in a closed porcelain jar for one month.


It is really surprising that, till now how north Indian peoples can miss the mouth watering & tangy taste of non-veg pickle so now it has to be introduced to north India.  In same way like masala dosa & Idli, which originated in south India but now it’s very popular & integral part of north Indian cuisine.
